No Indian festival is complete without food and Diwali is no exception. Here is the grand thali I prepared for Diwali this year.
It’s finally Diwali time and I couldn’t be more excited. Without a doubt, Diwali is my most favourite Indian festival.
The lights filled the streets, rangolis, card parties and whatnot, but one thing that I love most about it is the food. We all know that no Indian festival is complete without good food and Diwali is no exception.
Back in India, my Mum would always prepare a grand meal on Diwali and then serve it in those big thalis. I always try and follow the traditions and make sure that I cook something special, but this year I went a step further and prepared a Grand Diwali Thali with Shan Foods.
For the thali I decided to make Punjabi Chole, Aloo Bhaaji, Dal Tadka, Vegetable Dum Biryani, Cucumber Raita, Badam Kheer, Gulab Jamun, Popadum and Chapati. I was really excited to prepare this Grand Thali and had so much fun while cooking all the dishes. So, I thought why not share some recipes that I cooked with you all. Punjabi Chole
This is my mother’s recipe and every time I am craving Punjabi Chole made by her, this recipes comes in handy. Whenever I cook this I make sure that I send her a picture.

Instructions
Heat oil in the pan and add cumin seeds. Cook the cumin seeds for 1-2 minutes and add ginger-garlic paste.
After the ginger-garlic paste is well cooked and is slightly golden in colour add chopped onions.
Once the onions are light pink in colour add chopped tomatoes, salt, Shan chana masala and cook for few minutes. Add garam masala & coriander powder and let it simmer for some time.
The next step is to keep the mixture aside and let it cool for sometime. Once it has cooled down, pour the mixture into a blender and blend it to make the gravy.
Put the gravy back on the flame and add soaked & boiled chickpeas into it. Cook for 10 minutes on medium heat.
Your Punjabi Chole are ready. Garnish with lemon juice and coriander and serve with chapati
Vegetable Dum Biryani
Vegetable Dun biryani is one of my favourite Indian dishes, because it has lots of veggies. For this one, I added a little modern twist to the traditional dum biryani recipe.

Instructions
Heat cooking oil in the pan and add jeera. Cook the jeera for 1 minute.
Add chopped onions and cook them until they turn light pink in colour.
Once the onions are done, add chopped tomatoes and stir for few minutes.
After the tomatoes become soft, add salt, Shan Biryani masala and mix together.
Add chopped potatoes & mix vegetables to the mixture and cook for 10 minutes.
Once the vegetables are cooked, add yogurt and mix everything together nicely.
Now that everything is ready, take a glass bowl and add a layer of rice, then top it with a layer of biryani mixture and then complete it with a third layer of rice.
Cover the bowl with foil and cook in oven for 10-15 minutes.
Your Dum Vegetable Biryani is ready. Garnish with fried onions and serve.
Badam Kheer
Kheer is that one Indian dessert that I can never say no to. Even if I am full, I manage to make room for kheer. So, making kheer for the Diwali thali was a must.
Put milk in a pan and add Shan Badam kheer mix to it and mix them together.
Add boiled rice and cook for 10-15 minutes. Make sure you are stirring it frequently.
Once done, pour the kheer into a large bowl, garnish with chopped pistachios, rose petals and serve.

A juice cleanse is something that I wanted to try for quite some time now, but because of my busy work schedule and lack of time, I couldn’t go through with it. This time while social distancing and working from home, I thought that there wouldn’t be a better time to do a juice cleanse and, I finally did it a few weeks back. For all of you who don’t know what a juice cleanse is, it is a type of detox diet that involves consuming fruit & vegetable juice for a short period, like 3-10 days. My Experience
My overall experience with the juice cleanse was pretty good. The only challenge I faced was that I was craving coffee and food throughout the day. My main aim of doing this cleanse was to reset my mind and to flush out all the toxins from the body, and I think I was able to achieve that. After the power-packed green smoothie and the kids’ favourite choco-cornflake muffins, I decided to conjure something super-healthy and filling which I could have for lunch or dinner, apart from breakfast or in-between snacking. So I just hunted around and found some healthful and tasteful ingredients and here it was Quinoa and Sweet Potato Salad – the yummiest, healthiest salad I’ve ever cooked or tasted.
What really is amazing about this Quinoa Sweet Potato Salad is that, it is a treat for your taste buds- with warm roasted sweet potatoes, crisped chickpeas and caramalized onions literally causing an explosion of flavours in your mouth. And you can add to the aroma with fresh rosemary, thyme or coriander. The energy kick comes from quinoa and walnuts while fresh greens add to the nutrient count of this heavenly-tasting salad. The best part is that you can have it warm or cold, without worrying about adding on flab during the lazy lockdown time.

Instructions
Start by preheating the oven to 425 degrees.
Spread the diced sweet potatoes, chopped shallots and herbs on a large sheet pan. Toss with salt and olive oil. Roast in the oven for 20 minutes.
Next add chickpeas to the pan and stir up all the ingredients together. Roast again for another 20 minutes.
Pour the walnuts in a bowl and toss them with maple syrup and a little salt. Add them to the pan and stir it up. Roast for 5 minutes.
The healthy and delicious salad is done. Just remove the stems of the herbs and serve the roasted mixture with cooked quinoa, baby kale and a dressing of your choice.
I recommend this recipe because the entire ingredients are easily available; generally all of us would have them or something else that we can substitute. So there isn’t a need to step out for anything. You may replace sweet potato with potato or carrot. Or add eggs, goat cheese or cottage cheese to make the salad more wholesome, which is something I usually do if I want to serve it as a meal rather than have it as a filler or snack at my work desk.
For me, brown rice also works as a nice replacement for quinoa, just to create some variety as I do mix this salad a few times a week. And of course, I can experiment with the dressing as well. So practically, I have the option to come up with a different flavour every time, depending on how creative I can be with the ingredients I have in my refrigerator or kitchen cabinets (or even the herbs in my little kitchen garden, I love that one)
Apart from the fact that the salad tastes so good and is easy to mix, I wouldn’t want to skip mentioning its nutritional value. Let me just list them ingredient-wise.
Sweet potatoes– Great source of healthy fiber, antioxidants, vitamins and minerals, they are filling but don’t result in weight gain. They even support your immune function, something that everyone wants to do at this time. Walnuts– A fistful offers a healthy supply of omega-3s and antioxidants. They support weight loss and promote gut health as well. Moreover, they support your gut health and decrease inflammation, which can keep disease at bay. Chickpeas– Packed with proteins, they are an excellent substitute for meat for vegans and vegetarians. They also add vitamins, minerals and fiber to the salad. Chickpeas are good for satiating your appetite but you can have them without worrying about gaining pounds. Shallots– Not only do they enhance the flavour of food, but also supply antioxidants, promote weight maintenance and help fight germs (which makes them all the more important right now). Quinoa– A super health food, quinoa is gluten-free and loaded with protein. It also brings sufficient amounts of all the nine essential amino acids. And it is also high in fiber, iron, magnesium, B vitamins, vitamin E, calcium, phosphorus, potassium and various beneficial antioxidants. Baby kale– Kale offers a rich supply of fiber, antioxidants, vitamins C and K, calcium, iron, and a range of other nutrients. The antioxidants in it stimulate the release of unwanted toxins from the body, which makes it an ingredient of choice the lockdown season.
Such amazing benefits are only half the reason I toss up this salad at least thrice a week. The other half is the taste! Surprisingly, my little one loves it as much as I do, so this is something I can cook up for the family rather than just myself and my husband. And the best part of the deal is that it is so filling that it is as good as a full meal, so all the time I invest in cooking it is worthwhile.
More than anything else, this salad is as guilt-free as it is delicious. The quinoa version is the best one from the weight management perspective though you can be judicious with the servings of the rice version if you prefer to keep the extra weight off.

Coriander pesto is yum and super easy to make. It can be prepared with the ingredients available at home and is loved equally by children and adults.

Once you have all the ingredients ready with you, put them in a blending jar one ingredient at a time.
After you are done adding all the ingredients in the blending jar, put the lid on and blend all the ingredients until smooth to make beautiful green colored pesto sauce.
Once done, check the consistency and flavors of the sauce. The consistency of the pesto should not be too thick or too runny. If your sauce is too thick add some olive oil and blend again.
After you get the desired consistency and flavors, add some lemon juice to it for some extra kick.
Now that your coriander pesto sauce is ready, you can mix it with boiled pasta of your choice, garnish with sautéed tomatoes and enjoy.

The pesto can be used in multiple ways. It can be used as a dip, as a sandwich spread and even as a salad dressing
Coriander is rich in immune-boosting antioxidants and has many more health benefits, so this recipe is very healthy.
You can even store the pesto in the fridge in an airtight container for about a week.

It’s lockdown time and my biggest challenge perhaps (besides coping with my WFH routine) is managing my 6-year old. Weigh the ingredients. I did it myself, with mylittle one helping to pour ingredients into the weighing scales. You can let older children do this by themselves though.
Put the cornflakes in a large bowl.Get it done by your junior chef because he or she will probably be able tohandle it on your own.
Put butter, chocolate, and golden syrup ina saucepan. A microwavable bowl is an alternative if you plan to cook it in themicrowave. Melt the ingredients over a low heat (or heat briefly in themicrowave).
Allow the mix to cool a little and pour overthe cornflakes.

Once you have all the ingredients onyour shelf, it’s time to get started. Here is a list of instructions to createthe most yummilicious, gorgeous-looking Green Smoothie in just three steps anda couple of minutes.
Put all the ingredients in a blenderand blend them till smooth; make sure that there are no chunks of the leafygreens or fruits.
Once you mix up the perfect smoothie, taste it and perfect it. Ensurethat it has just the right consistency and temperature. If you want your kid totry it, I’d suggest adding some honey for the healthy sweet kick. You can evenadd a dash of lemon to balance the bitterness of the greens. My secretingredient is ginger because I love the zing it brings to the drink. Even mylittle one loves it!
After perfecting the flavours, justgive it a final whisk in the blender to get that amazing smooth consistency andvibrant green colour. You can refrigerate the drink for up to 24 hours, thoughI prefer blending a fresh batch every time. If you do want to use arefrigerated batch, be sure to shake it up before drinking.

I’m sure you’d love this recipe as it is just the pick-me-up you need when you feel the blues of the lockdown effect. You can try a few variations every time as I do. For instance, you can use pineapple or mango in place of banana. Toss in nuts and seeds of your choice. Or just experiment with any juice, water or any other milk. Every nook and corner has cafes that are teeming with either professional’s meeting to discuss business, friends sitting to catch up over coffee or family members visiting nostalgic nooks for a satisfying Sunday Brunch. And while the list is endless, we have narrowed it down to those cafes that should probably be at the top of your itinerary when you visit Mumbai.
Kala Ghoda Café
Kala Ghoda (Black Stallion) is one of the city’s more iconic areas that is buzzing with history and culture. Perhaps, this is why the café has taken on the same name, because it truly takes on these characteristics of the neighbourhood. Kala Ghoda Café is set in a 20th century barn with rustic furnishings and modern amenities. The cuisine is a mix of Continental delights as well as more of the local Parsi favourites and has a plethora of brews to choose from. It has also recently opened its own wine bar where one can enjoy both Indian and international choices. In support of culture, the café also occasionally transforms in a gallery to promote local talent, and makes for a great place to unwind with friends or a rendezvous with someone special.

Standing proud since 1932, Café Mondegar derives its inspiration from retro American diners and is the first café of the city with a vintage jukebox that still booms through the establishment today. Enviously located on the ever-buzzing Colaba Causeway, it is bordered with colourful shops of jewellery, handbags, juttis and more, and is a favourite for both locals and tourists. If you happen to visit the café for breakfast, don’t be surprised to see youngsters flooding the place, dressed up in their finery from the night before – it’s a favourite pit-stop for them to refuel after a long night of hard partying. The vibe is completely relaxed, with murals of Mario Miranda plastered across all walls and classic songs playing all day long. The cuisine is a mix of American Diner picks, Indian favourites and the famous Indo-Chinese derivatives. And each of these pairs well with everyone’s favourite – a pint of good old Kingfisher beer, that the servers are ever ready to help you with a refill.

Yet another icon of Mumbai, Leopold Café has witnessed some of the most tragic nights of Mumbai city, one of the main targets of the 26/11 attacks. And yet, it stands tall even today! One can even see the scars of battle till today, where the storm of bullets has left its mark on the walls. But that’s about where the tragedy ends. Again, situated on the bustling Colaba Causeway, the café is just as popular as its neighbour that we spoke of above. The difference in the offerings are not miles away, but if you come here, make sure to pick from the menu of classic Indian dishes that everyone loves to chow down, with pitchers of your favourite beer. The next time you visit the city, insist on the locals to take you here!

Let’s move out of local history, and take a culinary trip to France in Mumbai, shall we? Suzette is an authentic French bakery, café and bistro run by French expats and chefs, who have filled their counters with scrumptious boules and loaves of bread, luscious French pastries and satiating sandwiches, all made from scratch with love and commitment in their very own kitchen. The ingredients for each of their products are meticulously chosen to give one a true taste of France. Located in the more happening suburb of Bandra, in Mumbai, this little café has had a mighty impact, with everyone from the neighbourhood making a pit stop for a coffee run or a gratifying, yet healthy meal if they are feeling peckish.

Heaf Chef and Founder of Le 15, Pooja Dhingra, erected this establishment as an effort to bring a bit of her happy place – Paris, to Mumbai. Le 15 first started out as a small patisserie serving delicious pastries, cupcakes and macarons. Today, it has its various outlets dotted all across the city, serving patisserie delights, French-inspired nibbles and great coffee. The café at every nook and corner of the city is a great place to re-energize yourself with some food and brew before you take on the rest of your busy day. Bon Appétit!

In case you are feeling particularly low or homesick on your travels in Mumbai, we suggest stopping by at an outlet of Grandmama’s Café that can be found at various neighbourhoods in the city. After all, there is nothing more comforting than a meal cooked by your grandma, and these little joy-filled kitchens are an ode to grandmothers all over the world. Serving classic dishes straight from the stove of your childhood, everything at Grandmama’s Café is sure to perk you up and put you in a better mood. With quaint settings and vintage furnishings, it’s like a blanket of comfort in a hug or in a bowl! The three levels of this building are filled with vintage posters and unique mosaics and tiles, Moroccan lamps that make you feel like you are on a Mediterranean holiday. And most importantly, nothing beats the taste of your favourite dishes from your late teenage years.

In the heart of London lies one of the city’s most well-appointed and contemporary landmarks of modern gastronomy, Searcys at The Gherkin. Across the United Kingdom, Searcys’ various restaurants and bars are known for their carefully curated menus and lavish collection of hand-picked champagne vintages from various notable houses, as well as small, independent growers, to give guests a taste of the perfect food and beverage melange, with every fine dining experience.
The Helix restaurant and Iris Bar at The Gherkin, London, offer most scrumptious dishes and the finest concoctions with a vista of London’s expansive cityscape. It makes for a romantic spot for dates and my husband and I recently celebrated our anniversary at the Helix restaurant. The name of the restaurant is in fact, inspired by the helix-like structure of the skyscraper and offers a sleek ambiance with artistic and floral nuances. The Iris Bar is situated on the highest level of the Gherkin edifice and is a nod to the iris-like shape of the peak of the iconic London building.
While the ambiance is an epitome of chic and the vista simply breath-taking, the food and cocktails are outstanding, and the service is impeccable. I am a vegetarian, and the restaurant’s offerings more than exceeded my expectations. Picking bits and pieces from an elaborate menu, our first course of starters were servings of Whipped goat’s cheese, pickled heritage carrots with summer leaves and Portland Crab, celery, grapes, topped with candied walnuts. The goat’s cheese was silky and the crunch from the carrots and freshness of the leaves offered the perfect balance to the tang from the whipped cheese. My husband thoroughly seemed to enjoy the flaky crab meat and its mixture with the caramelized nuts and grassy celery.
The vegetarian main was unique – a serving of Confit leeks, Evesham broad beans, and herb dumplings, a taste of Britain’s freshest seasonal produce with flavours that meld together perfectly. The succulent and juicy meat from my husband’s choice of the Braised shoulder of Herdwick lamb, heritage carrots, spring greens, and buckwheat seemed completely irresistible, and I barely managed to escape the temptation.
The desserts, though, topped this gastronomic escapade. The Chocolate ale cake with cherry compote and vanilla ice-cream are a match made in culinary heaven, and the combination of Tart with strawberry ice-cream is divine and sweet ending to any meal.
Although, going here at any time of the year feels like a luxurious treat, this summer is an especially great time, thanks to a unique pop-up called “The Glasshouse at the Gherkin”, in partnership with Perrier-Jouët Champagne, until 1st September 2019. The pop-up is a homage to fresh and natural products and ingredients and welcomes guests for indulgent dining experiences featuring delicacies made with seasonal produce paired with exquisite Champagne vintages and gin concoctions, and masterclasses held by expert mixologists. The Ivy, Birmingham opened its doors to food fanatics in April 2018 and has been delighting diners with its delicious fare ever since. Elegant, enticing, and exciting, the Ivy promises you a memorable dining experience, and in my opinion, it delivers far more than is expected.
I had been wanting to visit The Ivy Birmingham for a while, when last month, I was finally able to make it to Temple Row in the City Center where it’s located. We’d heard great reviews about the place and were looking forward to our first brunch meal here.
When we entered the restaurant, our first impression was of plush sophistication. Hues of orange and green are dominant in the décor, with beautiful Art Deco glass, muted lights, and interesting artwork adorning the walls. The 3-floors of The Ivy Birmingham are as much a tribute to great artistry as they are to gastronomy. Simply sitting in the pleasant ambiance was very invigorating; the sumptuous food, a big, big bonus.
We started our meal with a coffee since that’s the elixir that gets me up and going every day. My cappuccino was rich and satisfying, with the Ivy logo floating on the froth. We then moved on to the interesting offerings of the brunch menu which are served till 11.30 am Mon-Fri, and till 11 am on the weekend.
Here’s what we ordered: two juices, Beet It and Green Juice, one portion of Avocado, tomato, and sesame, which comes with poached hen’s eggs on toasted granary with sesame dressing and also the breakfast classic Eggs Benedict.
Beet It was a flavorsome concoction of beetroot, apple, lemon & ginger, while Green Juice had avocado, mint, celery, spinach, apple, and parsley. The juices were super-healthy and very refreshing, and if I’d had any more space left, I would’ve tried a few more juices from their enticing selection of fresh beverages.
The Avocado preparation had chopped avocado topped with roast plum tomatoes, a poached hen’s eggs and sesame dressing. The combination was complimentary and the preparation light, which made it a perfect brunch dish.
The Eggs Benedict came with pulled honey roast ham on toasted English muffins, two poached hen’s eggs with hollandaise sauce, and some watercress. I love this preparation since the eggs were cooked to perfection and the hollandaise sauce was flavoured just right.
To sum up the experience, I’d say it was fabulous beyond words. The selection of food at The Ivy Birmingham is a flawless balance of British classics and world cuisine. The ambiance and décor are spectacular, to say the least. The open, wide-spaced seating makes it a great place to host parties or enjoy a night out with friends or family. The staff is courteous and well-informed of the menu’s specifics. All these positives make me want to visit again, sometime soon.
I’ll probably head to The Ivy Birmingham again for another brunch with friends, or maybe even on date night!
One of the finest stately venues in England,Brocket Hallhas been the much loved weekend getaway destination for the elite. Located 22 miles away from Central London over a sprawling area of 540 acres in the lovely Hertfordshire countryside, it is one of the preferred locations for grand events hosted by the rich and the famous from the political, business and social circles. It is also home to the Melbourne Club, one of the most exclusive golf venues in the UK.
The place has an amazing history as well, which adds to its attraction manifold. With its earliest evidence dating back to 1239 and the association with the famous names like Lady Caroline Lamb (who had a scandalous affair with Lord Byron) and Lord Palmerston (the Prime Minister who died while making out with a chambermaid on the billiard table), Brocket Hall offers a slice intrigue for history lovers. Not only was it home two Prime Ministers but was also frequented by the royals like Queen Elizabeth I, Queen Victoria and Edward VII centuries ago.
I had the opportunity to explore all that this lovely location offers during a weekend stay here. And trust me, it does have a lot to offer- beautiful surroundings, sumptuous food, comfortable stay and of course, an interesting history. We stayed at the elegant Melbourne Lodge which is the lodging part of Brocket Hall, located right amidst its tranquil grounds. The lodge offers splendid views of Brocket Hall, Melbourne golf course and the Broadwater Lake.
Originally a coach house, the Melbourne Lodge now has 16 rooms, each of which is named after a racehorse. This has been done as a tribute to the history of the place, which used to be a race course once. Our room was named the Sun Chariot and I loved its decor. It was spacious, bright and airy, in addition to being well-aligned with the classic appearance of the rest of the estate. The vintage décor, with rich velvet drapings, squashy armchairs, illuminated oil paintings and china lamps, deserves a special mention. The bed in our room was crafted with a massive feature back to represent the regal era. The bathroom too had a vintage touch with deep bath and double sinks.
While the rooms at the Melbourne Lodge still replicate the rich heritage that the place is so well-known for, they also have all the modern amenities that you may want for a comfortable stay. with complimentary breakfast in the lakeside Clubhouse as a part of the package. Besides enjoying the luxurious experience here, I took immense pleasure in the refreshing views of the lovely lush green golf course from the huge sash windows of my room.
The peace and tranquility of the place impressed me the most, but amazingly that is not all! Brocket Hall is a serene and calm location that offers a relaxing break, away from the hustle and bustle of the city. Still, there is something for everyone here. My little one loved the greens, golf course walks and rides in the golf cart. There was something incredible about the drive around the golf course; a massive lake in the center, the myriad ancient trees, and the impressive architecture all around, together made a feast for the eyes.
Now let me talk about the things that you can see and do at the Brocket Hall Estate. As a guest at Melbourne Lodge, you can’t get inside the Hall but wander around the parkland and also enjoy a guest membership at the golf club. I loved the lazy long walks by the Broadwater Lake and the mouth-watering breakfasts in the clubhouse.
But the most favorite part of my stay here was the sumptuous meals at the Auberge du Lac, the restaurant located in the Hall’s former hunting lodge.
Auberge du Lac has a charming lakeside setting the overlooks the sprawling country estate as well as the Brocket Hall itself. It has a beautiful lounge though I personally recommend that you relish your meals on the picturesque terrace if the weather permits. If you are looking for a private dining experience, the place has some tastefully decorated rooms that can accommodate 2 to 16 guests at a time. I found the service as well as the ambience of the place to be absolutely commendable.
Coming to food, the first thing I would want to say that you can expect a lot from Auberge du Lac because it has an AA rosette and the Michelin-starred chef, Matt Edmonds, cooking for you. What more, they will be celebrating their 20 years this November, So the bar is expected to be really high and they meet the standards as well. We went to have the famed 7-course tasting menu with wine pairing; they have both vegetarian and non-vegetarian options and even their main menu has lots of great options for veggie options as well and I tried the former as I am a vegetarian.
Comprising of unusual dishes such as Heritage Beetroot, B low Torch Smoked Eeel (for the non-vegetarian meal) and Miso Caramel Mousse, it was an absolute gastric delight. The wine list was equally impressive, with the likes of Pouilly Fuisse, Uruolat Jurancon and Chateau Montelena served as a part of the menu. The seven-course meal cost £ 85 per person with tasting wines at £ 135 per person, which can be considered whopping but were worth the price considering the dining experience we had. And one thing that I cannot forget about Auberge du Lac is that we were taken to the restaurant from the lodge in the golf cart which was as amazing as the food itself.
The weekend trip to Brocket Hall was a complete getaway for me as it had everything a looked for, the tranquility of the countryside, a luxurious stay, wonderful ambience, excellent dining experiences and views to die for. I will definitely make it a point to visit the place soon.
